So those of you who know me well….know I am a HUGE fan of LEMON!!!!! Pretty much lemon ANYTHING….lemon yellow, lemon chicken, lemon trees, lemonade, lemon candy…..but ESPECIALLY Lemon DESSERTS!!!!!!!!
As a matter of fact…I have an entire board filled with pins about all things lemon on Pinterest. (Mostly desserts of course…but some other lemony goodness too!)
Anyway….my favorite daughter Britta (OK, my only daughter) decided to bring us a treat the other day from a bakery in Salt Lake called Ruby Snap Cookies.
(I guess it used to be called Dough Girl but the Pillsbury people had a Dough BOY fit over the name and forced her to change it. Kill joys!)
Ruby specializes in cookies….12 different specialty kinds to be exact….and guess which one is my FAVORITE!!!!!????? This baby right here. (And pictured above!)

Ohhh….and they ARE delicious!!!!! This afternoon I just HAPPENED to have to make a trip down to Salt Lake to pick my son up from the airport. And wouldn’t you know it….his flight just HAPPENED to have been delayed….and I just HAPPENED to be not that far from Ruby Snap and those cookies were calling my name!
We might have sampled about 6 different cookies between us (hey! It was dinnertime and we were starving!)….next time we’ll have to try the other 6! :-)
So, this is my very very very VERY VERY VERY GOOD THING for today! :-) And since I couldn’t talk Ruby into actually giving me her recipe for these little gems…as a substitute I am posting one of my favorite lemon cookie recipes from Martha Stewart….Glazed Lemon Cookies. (Did I mention I like glaze??!!)

Another one we sampled….yes, those are FRESH raspberries on top! mmmmmmmmmmmm!
2 cups all-purpose flour, (spooned and leveled)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon finely grated lemon zest, plus 2 tablespoons fresh lemon
1/2 cup (1 stick) unsalted butter, room temperature
1 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, salt, and lemon zest. In a large bowl, using an electric mixer, beat butter and granulated sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture. Drop dough by heaping tablespoons, 1 inch apart, onto two baking sheets. Bake until edges are golden, 15 to 20 minutes, rotating
sheets halfway through. Let cool 2 minutes on sheets, then transfer cookies to a wire rack to cool completely. Spread cookies with Lemon Glaze and let set, about 1 hour.
Use this glaze GENEROUSLY atop the Glazed Lemon Cookies. :-)
