Meals For Two . . . and Other Food Inspiration!

holidays are comingI can’t believe how fast this summer is going by!  Lately I’ve been seeing more and more people pinning holiday-related ideas (like this cute idea for Halloween Shepherd’s Pie) on Pinterest and I’m starting to panic a little!

Before we know it the holidays will be upon us! Of course that means lots more cooking, eating, and celebrating!

Luckily I have discovered a new source of food inspiration!

It’s called The Dish and it’s an online resource created especially for bloggers (but anyone can take a peek!) that includes seasonal recipes, cooking advice, kitchen tips, the latest food trends, and it even has a team of experts to answer your food questions.

One of their experts you might recognize, Celebrity Chef George Duran (remember Food Network’s “Ham On The Street”?).  In one of his videos, “Meals For Two”, he shares great advice on how to avoid the drive-thru or the closest takeout menu when your weeknights get hectic. (I think we can ALL relate to that…whether there’s TWO of us or MORE).

His tips for “dressing up dinner” by keeping just a few key pantry items on hand inspired me! I mean who would have thought you could take Chef Boyardee Beef Ravioli, Hunt’s tomatoes, gooey cheese and fresh spinach and make something fabulous in minutes?  George is pretty much a genius. :-)

Celebrity Chef George Duran

Put into microwave-safe bowl:  1 can Chef Boyardee Ravioli, 1 can Hunt’s Diced Tomatoes (drained), and 1 teaspoon italian seasoning. Mix together carefully, making sure not to break up the ravioli. Microwave for 3 to 4 minutes. While that is in the microwave, mix together approximately 1/2 cup cottage cheese, 1/2 cup frozen spinach (thawed and drained) and 1/2 tsp. black pepper.

To assemble: coat an 8 by 8 inch casserole dish with some cooking spray, layer 1/2 the ravioli mixture in the bottom of the dish, followed by 1/2 the cottage cheese & spinach mixture, and 1/2 cup shredded mozzarella cheese. Repeat all three layers. Place in a 375 degree oven for approximately 5 to 10 minutes or until the cheese is nice and bubbly.

    I’m not panicking, but I’m definitely already planning my Halloween party this year! I love this time of year…the parties and family get togethers and yummy food just doesn’t stop!

    Thank you for all the inspiration yourself! I always get inspired to try new homemade products or recipes after reading your blog!

        Well, I had just started thinking about it a week or so ago, then I remembered, by the end of August, the crafts stores start to move on to Christmas! So I’m almost forced to plan early, but hey – it makes it last that much longer! :D

    The funny thing is that just this morning as I woke up, I thought to myself “geez, the holidays are right around the corner”.
    I’m not panicking about the food and planning and whatnot, mainly because I leave most of that stuff up to the rest of my family. But, I have been working on some scrapbooks for my cousins (there are 8 of us, total) about our grandparents and progress has come to a screeching halt because I ran out of ink for the computer and can’t make anymore copies of photos. It’s something I need to get cracking on if I want to get them done before Christmas! OK….there’s the panic!

    I’m totally starting to freak out too. Just yesterday the Budget Saavy Diva posted pics on facebook of the Dollar Tree all decked out for Christmas? What the ……..? Am I confused or is it still only August 9? Thanks for the great site. I have a blog, although I have no idea how to identify it’s URL (not very tech saavy here). Is it a paid subscription to the site? Great post!

    Thanks, Jillee! I love your blog and this looks like a fun resource. I like the Ask Our Team section – I’ll be watching for more from Phil Lempert, specifically, as it looks like he has good ideas on how to make our food budget stretch farther.
