2-Ingredient Creamy, Cheesy Queso!

Today has definitely been “one of those days”! Actually, the whole week has been pretty chaotic. As I have mentioned before….my oldest son Erik is getting married this weekend and it seems each day we get closer to the “big day”….some sort of chaos erupts. Two weeks ago, my youngest son Sten dislocated his knee…two days ago Erik started having some wicked neck spasms that he saw the Doc for and is just tonight finally getting some relief from….and today…..half the basement flooded by a backed up pipe leading to the clothes washer.  *sigh*

They say things like this come in threes….I sure hope so!  I don’t think I can take a fourth incident at this point.

Sooo….since tonight was spent cleaning up flood waters and dealing with the nice Roto Rooter man, not much food preparation went on.  We all kind of just found something to snack on.  Needless to say….now as I sit here at almost midnight….I am starving!  And not only am I hungry….I am craving some comfort….as in comfort food right now. :-)

Looking at the usual array of delicious food treats that are on Pinterest on a daily basis was particularly tormenting tonight.  But the recipe that stopped me in my tracks???  Queso!!!  Oh how good a bowl of warm, delicious, cheesy queso would taste right now!

So today I am sharing my “go-to” recipe for Queso that is so quick and easy you will be amazed!  Just 2 ingredients and you’ve got a ready-made party for your mouth!   (Can you even CALL it a recipe when you literally just dump two ingredients together and warm them up in the microwave?)  Well, I guess you can, because here it is direct from the Ro*Tel website:

Ro*Tel® Famous Queso

A creamy, cheesy and spicy dip made with just 2 ingredients–a Ro*Tel signature recipe
Hands On: 10 minutes | Total: 10 minutes | Makes: 2-1/2 cups or 20 servings (2 tablespoons each)


  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 pkg (16 oz each) Velveeta® Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes


Combine undrained tomatoes and cheese in medium saucepan.
Cook over medium heat 5 minutes or until cheese is completely melted and mixture is well blended, stirring frequently.
Serve warm as a dip with tortilla chips, crackers or cut-up fresh vegetables.

Cook’s Tips
To make in microwave, combine undrained tomatoes and cheese in 1-1/2-quart microwave-safe dish; cover. Microwave on HIGH 5 minutes or just until cheese melts, stirring after 3 minutes. Remove from microwave; stir until mixture is well blended. CAUTION: Dish will be hot; use hot pads.

I know….it’s not a very “authentic” recipe for queso….but I’m tellin’ ya…don’t knock it til you’ve tried it! Sometimes, if we’re very lucky, the best things in life are also the simplest!

  • Growing up in Texas, I have been making this for as long as I can remember. Still prefer it with just the 2 ingredients though. Have had it all kinds of ways: with sausage, chili, whatever people thought would be good. I’ll take it the old way. We love to put it on our tacos in place of shredded cheese. Ummmm, think there is some in the fridge, maybe I’ll heat it up now. :)

  • My son loves this dip. I sometimes add mild pork sausage. I brown the meat in a pot, drain and then melt the cheese and rotel, when the chesse is melted I add the sausage back into the melted cheese using the same pot. I hate washing dishes. I also add a little milk so that it’s not so thick. If I don’t have rotel I just use salsa.
