Dessert Sliders Made 3 Different Ways!

If you’re a fan of “sliders,” like I am, you’re going to love the new twist we’re putting on them today…DESSERT! Not only are they delicious (I mean REALLY delicious!) they are simple to make and beautiful to look at! They ALMOST look too good to eat….but don’t let that stop you! :-)

Kaitlyn writes……….   When Jillee showed me a picture of sweet sliders made with vanilla wafers and ice cream in the June issue of Better Homes and Gardens I immediately started thinking of all the possibilities for dessert sliders. The combinations really are endless! These miniature sweet treats are perfect for outdoor summer parties. Below you’ll find three different combinations I came up with. My taste testers said they were all delicious!

Vanilla Wafer Sliders

  • Vanilla Wafers
  • Ice  Cream
  • Coconut

This was the combo from BHG and it was just as delicious as it looked!

Start by toasting your coconut on a cookie sheet in the oven at 350 for about 10 minutes.

Next, take a vanilla wafer and put about a tablespoon of ice cream on it. I used pistachio gelatto and it was delicious but just about any flavor of ice cream would be great!

Top it with another vanilla wafer.

Now roll it in your toasted coconut and place the finished product on a cookie sheet or plate and put in the freezer until you’re ready to serve. If you aren’t a coconut fan you could roll these in nuts or even sprinkles for a pop of color.

Raspberry Chocolate Cheesecake Sliders

  • Fresh Raspberries
  • Chocolate Cookies
  • Cheesecake Filling

Start by making your cheesecake filling. I made this no bake cheesecake filling to keep things simple. Put your filling in a plastic baggie and snip off one corner. Use the bag to pipe the filling onto a chocolate cookie.

I used some Keebler dark chocolate cookies but anything would work. I think the filling would be delicious on an Oreo or even a graham cracker for a more traditional cheesecake flavor. Top the filling with a few raspberries. I was able to fit 4 small raspberries or 3 large raspberries on my cookies. Strawberries or blueberries would be delicious as well!

Pipe more cheesecake filling onto the raspberries and top with another cookie. Put in the refrigerator or freezer until you’re ready to serve.

Raspberry Chocolate Cheesecake Sliders

S’Mores Sliders

  • Graham Crackers
  • Marshmallows
  • Chocolate Chips
  • Sprinkles

I have to share a bit of a fail with you before I get to the recipe. I thought it would be a great idea to use marshmallow fluff for these sliders to avoid having to roast marshmallow. Well I had never cooked with marshmallow fluff before and didn’t realize it would seep out the sides of my graham crackers creating a huge mess.

So I did a little searching and found out that it’s super simple to toast marshmallows in the oven under the broiler! Thanks to Trish at Mom on Timeout for that tip! She made her s’more with chocolate dipped mini waffles which I’m going to have to try sometime.

Now back to the recipe :-)

Start by toasting your marshmallows. It takes less than a minute under the broiler so keep an eye on them! I turned away for a few seconds on one batch and ended up burning a bunch of my marshmallows.

Next, assemble your s’more but without the chocolate.

Melt your chocolate chips in a double boiler or in a glass bowl over a pot. Stir frequently so you don’t burn the chocolate. I also like to add a few tablespoons of coconut oil to thin out the chocolate a bit.

Once the chocolate is melted you can dip one end of your s’mores in the chocolate. Put the s’mores on a cookie sheet lined with a silpat. I made the mistake of putting one batch on a glass plate and ruined some of the s’mores.

Add a few sprinkles to the chocolate for some fun color.

Put the cookie sheet in the freezer for a few minutes or until the chocolate hardens.
