I kind of freaked myself out today when I looked at the calendar and realized that St. Patrick’s Day is in one week! I can’t believe how fast this month is already flying by! Before we know it, we’ll all be complaining about the HEAT! :-)
Since St. Patrick’s Day is just around the corner, I thought it might be fun to post a few ideas for celebrating the day. Not being Irish myself, I don’t normally do much with regards to this holiday beyond once in awhile making corned beef for dinner. But I’m all about looking for excuses to celebrate…because life’s too short! So I tried to think of a few fun ways to celebrate the day…and what’s more fun than GREEN Shamrock Chips and GREEN Blender Guacamole!? :-)
How did I perform such “green magic”? Well, I’ll tell you! :-) Go to the store, purchase Spinach Tortilla Wraps and you’re halfway there!

Then all you need to do is track down a shamrock-shaped cookie cutter (which, for me, wasn’t easy!) and start cutting out chips!
TIP: Heat the tortillas for a few seconds in the microwave first. It will make the cutting out part MUCH easier!
Once you have enough cut out to fill a cookie sheet, brush the tops of them with some cooking oil (I used canola oil,) sprinkle a little kosher salt on top, and bake them in a 375 degree oven for approximately 6 minutes.
You just made GREEN Shamrock chips!
Since these are made from flour tortillas, I also decided to make some gluten-free corn chips for my son Kell using the same instructions as above.
I tried to make them “green” with some food coloring and water…but as you can see in the photo below….they just turned out kinda weird and unappetizing, so I scrapped that idea.
Now I don’t know about YOU, but I always want DIP to go along with my CHIPS, and since nothing says “celebration” like chips & dip I decided to make some!
I had a crazy, busy day packing for an upcoming business trip….so I decided to “cheat” a little and make guacamole in the blender.
This recipe could not have been easier and more DELICIOUS! Normally I like my guacamole chunky, but this was actually a nice change of pace and the flavor was so good! My brother Kevin happened to stop by while I was making it and he couldn’t stop eating it. :-)
- flesh of 2 ripe avocados, scooped out
- 1/4 of a medium sized white onion (no need to chop)
- 1 1/2 tablespoons lemon juice
- 1/2 teaspoon chili powder
- 1/3 cup mayonnaise
- 1 small tomato, cut up in large chunks
Add all ingredients to the blender. Blend until smooth. I told you it was easy! :-)
Well, I have fought the urge long enough! The whole time I have been writing this post it’s been all I could do not to run to the kitchen and break out the chips and dip! But I buckled down and finished. Now it’s time for my reward! Midnight snack, here I come!
