Classic Potato Salad

My mom's classic potato salad is a family favorite, and it's sure to make the perfect side dish at any backyard barbecue!

Ingredients:

  • 8-10 white rose or red potatoes
  • 6 hard-boiled eggs
  • 2 tbsp green onions
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tbsp yellow mustard

Instructions:

  1. Boil the potatoes until fork-tender.

  2. Drain the potatoes, allow them to cool, then peel them and cut them into bite-sized pieces.

  3. Cook the eggs, allow to cool, then peel (if necessary) and chop into small pieces.

  4. Thinly slice the green onions.
  5. Add the potatoes, eggs, onions, salt, and pepper to a large bowl, then chill in the fridge until ready to serve.

  6. Before serving, mix together the mayonnaise, sour cream, and mustard, then fold gently into the other ingredients.

  7. Serve and enjoy!
