Garlic Lemon Chicken Skewers

This bright and tangy chicken gets a delicious charred flavor from the grill, resulting in a quick and easy dinner you'll make again and again!

Ingredients:

  • 3 Tbsp olive oil extra virgin
  • Zest of 1 lemon
  • 3 cloves of garlic minced
  • 1 Tbsp fresh parsley minced
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 lb. boneless skinless chicken breasts cut into 3/4” pieces

Instructions:

  1. In a mixing bowl, whisk together the olive oil, lemon zest, parsley, garlic, salt, and pepper. 

  2. Add the chicken pieces to the marinade and stir to coat. 

  3. Cover and marinate in the fridge for 2-8 hours.

  4. Preheat your grill to medium heat.

  5. Thread the marinated chicken pieces onto skewers and discard the extra marinade.

  6. Place the skewers on the grill, cover, and cook for 8-12 minutes until cooked through, turning once during cooking. 

  7. Transfer the finished skewers to a warmed platter and serve.
