I love grilled cheese sandwiches! They are easy to make and always delicious. Plus, my whole family loves them (try one on my gluten-free bread) because they are also easy to customize. With all of the fabulous cheese and filling ideas I’ve found, I even decided to start a Pinterest board just for grilled cheese recipes!

  • 1 Tablespoon olive oil
  • 1/2 red onion
  • 4 slices sourdough bread
  • 50 grams butter
  • 2 ounces fig spread
  • 1/4 pound brie cheese
  • 1 granny smith apple
  • 50 grams baby arugula


  1. Caramelize the onions. Thinly slice half of a red onion while the pan and olive oil heat up over medium heat. Toss the onions in the hot oil, and toss them around for a few minutes. Set aside.
  2. Spread softened butter on one side of each slice of bread, and then spread about 1 tablespoon of fig jam on the other side of each slice.
  3. Layer thin slices of brie, thinly sliced apples, caramelized onion, and a bit of arugula.
  4. Heat a large skillet over medium-low heat.
  5. Place the sandwiches in a warm pan and cook until the buttered bread is perfectly golden!
