Cones are cheap, available at every grocery store, and add an element of FUN to just about anything! I love a good cannoli, but have never made them before because the shells seemed like too much work. With this simple recipe, you use sugar cones for the shell, and just whip together a quick filling.

  • Ice Cream cones


  • 1 15 oz container of ricotta cheese
  • 1/2 cup powdered sugar
  • 2 Tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips


  1. Combine all the ingredients (except the chocolate chips) and mix until smooth and creamy.
  2. Place the filling in a quart-sized zippered plastic bag and refrigerate for a few minutes, just so it stays nice and cold.
  3. Snip off a corner of the bag and pipe the filling into the cones, topping with mini chocolate chips.
