I found a simple and delicious Caesar salad dressing recipe (no fish-handling required!) and an even simpler way of eating my salad (at any pace I desire) — with my fingers!

Ingredients:

SALAD:

  • 1 Hearts of romaine lettuce

CAESAR SALAD DRESSING

  • 1 tsp. minced garlic
  • 1.5 tsp. anchovy paste
  • 1.5 tsp. Worcestershire sauce
  • 1.5 tsp. dijon mustard
  • 2-3 Tablespoons lemon juice
  • 1 cup mayonnaise
  • 1/2 cup parmesan cheese freshly grated
  • salt & pepper to taste

Instructions:

  1. Whisk together the first 5 ingredients then add the cheese, salt and pepper and stir until well-combined. Store dressing covered in refrigerator up to 2 weeks.

TO ASSEMBLE YOUR “FINGER” SALAD:

  1. Wash and trim hearts of romaine lettuce, separate into individual lettuce spears.
  2. Add croutons of choice and serve together with a small bowl of dressing.
