Finger Caesar Salad

Caesar salad is my favorite salad…but about the only time I’d ever eat it was at a restaurant because it always seemed like a lot of work to replicate at home. I’ve tried the store-bought Caesar dressings (and I’m not a fan) and making it from scratch wasn’t too appealing. Anchovies? I don’t think so! Plus, Caesar salad is best eaten immediately after being tossed and since I’m a super slow eater, this didn’t work for me either.

Ingredients:

SALAD:

  • 1 Hearts of romaine lettuce

CAESAR SALAD DRESSING

  • 1 tsp. minced garlic
  • 1 1/2 tsp. anchovy paste
  • 1 tsp. Worcestershire sauce
  • 1 1/2 tsp. dijon mustard
  • 2-3 Tablespoons lemon juice
  • 1 cup mayonnaise
  • 1/2 cup parmesan cheese freshly grated
  • salt & pepper to taste

Instructions:

  1. Whisk together the first 5 ingredients then add the cheese, salt and pepper and stir until well-combined. Store dressing covered in refrigerator up to 2 weeks.

TO ASSEMBLE YOUR “FINGER” SALAD:

  1. Wash and trim hearts of romaine lettuce, separate into individual lettuce spears.
  2. Add croutons of choice and serve together with a small bowl of dressing.
