APPLE PIE FRENCH TOAST

Looking at the calendar today I could hardly believe my eyes! Thanksgiving is right around the corner! And as if to put a point on it, the weather has turned SO cold here! All this cold weather and thinking of the upcoming holidays gets me thinking of one thing….lots of good food on the way! :-) At my house, the holidays are FIRST about family & friends, with some acts of charity thrown in, but after that it’s all about the FOOD. That’s why in addition to our traditional dishes, I’m always on the look out for some new delicious ones to try out.

Ingredients:

  • 18 slices Bread
  • 21 oz Apple pie filling
  • 8 Eggs
  • 2 cups Milk
  • 2 tsp Vanilla
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1 cup Brown sugar
  • 1/2 cup Butter cubed
  • 1 cup Pecans chopped
  • 2 Tbsp Corn syrup

Instructions:

  1. Place 6 pieces of bread in a greased baking dish.
  2. Spread one half of the pie filling on top of the bread.
  3. Add another 6 layer of bread on top.
  4. Spread the remaining pie filling on top.
  5. Cover with the remaining slices of bread.
  6. Whisk together eggs, milk, vanilla, cinnamon, and nutmeg in a small bowl.
  7. Pour egg mixture over the bread.
  8. Cover the dish and refrigerate overnight.

  9. Remove dish from fridge and uncover.
  10. In a small bowl, cut cubed butter into brown sugar until it becomes coarse in texture.
  11. Stir in pecans and corn syrup.
  12. Crumble this mixture over the bread and bake for 40-45 minutes.
