Brazilian Cheese Rolls {Gluten Free}

These little morsels of melted cheese goodness are called Pao de Queijo and they’re made with tapioca flour which means they are naturally gluten free! Yay!

Ingredients:

  • 1 large egg
  • ½ cup milk
  • ¼ cup canola oil
  • 1 cup tapioca flour
  • ½ tsp kosher salt
  • ¼ cup medium cheddar cheese
  • ¼ cup parmesan cheese

Instructions:

  1. Preheat your oven to 400 degrees.
  2. Blend egg, milk, oil, tapioca flour and salt in a blender until smooth.
  3. Add cheese and pulse 2 times.
  4. Pour batter into a mini muffin tin, filling each cup about ¾ full.
  5. Bake 10-15 minutes until golden brown.
  6. Remove from oven and allow to cool.
