Norwegian Pancakes

Eating a big stack of these Norwegian Pancakes is a Christmas morning tradition at our house!

Ingredients:

  • 4 eggs
  • 1/2 cup warm water
  • 1 teaspoon vanilla
  • 1/3 cup sugar
  • 1/3 cup melted butter
  • 1 1/4 cup flour
  • 1 cup milk

Instructions:

  1. Add eggs, water, and vanilla to blender. Blend. Add remaining ingredients, blending after each addition until smooth.

  2. Butter a saute pan or griddle with some butter. Heat pan to medium; then pour about 1/4 cup batter onto griddle. Cook for about a minute, then flip it and cook about another minute.

  3. Stack the pancakes and keep warm until serving.
