I decided to whip up a batch of my favorite peanut butter bars the other day and was stunned to realize I had never done a blog post about these before! These are one of my ALL-TIME FAVORITE homemade treats…and I’ve been making them since I was a young girl! I even made them when I was a freshman in college and living in the dorms. I had a little electric hot pot in my dorm room for heating up soup, etc. and I my roommate Diana and I would use that for melting the butter and the chocolate chips…then we would put the bars outside on the window ledge to cool (which was particularly effective in the winter months!)
1package of graham crackers or about 1 cup crushed I use Gluten-Free Graham Crackers
1cuppeanut butter I like to use extra crunchy!
1cupmilk chocolate chips
In a medium-sized bowl, mix the melted butter, graham cracker crumbs, and powdered sugar together until combined. Stir in peanut butter.
Spread into a 9 x 13 baking pan and pat down firmly.
In a small bowl, microwave the chocolate chips until melted. Stir until smooth.
Spread over peanut butter layer.
Chill until completely firm, at least 3 hours
