Chicken Cordon Bleu Skillet

Ingredients:

  • 1 lb penne pasta
  • 4 Tbsp butter
  • 2 cloves garlic minced
  • 3 Tbsp flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp. mustard powder
  • 2 cups shredded rotisserie chicken
  • 1 cup thick-cut ham chopped
  • 2 cups shredded Swiss cheese
  • 1/2 cup grated Parmesan cheese
  • 1 Tbsp fresh parsley chopped

Instructions:

  1. Cook pasta according to package directions until al dente. Drain the cooked pasta and set aside.
  2. Melt the butter in a Dutch/French oven over medium heat. Add the garlic to the pan and cook for about 2 minutes, until fragrant.
  3. Sprinkle the flour into the skillet and cook for 2 more minutes, until the mixture is golden brown. Pour in the chicken broth and heavy cream, and bring the mixture to a boil.
  4. Season with salt and pepper to taste, and add the mustard powder. Reduce the heat to medium-low and cook until slightly thickened, about 10-12 minutes.
  5. Remove the pot from heat and stir in the cooked pasta, chicken, ham, and Swiss cheese. Sprinkle Parmesan over the top.
  6. Bake in the oven at 400 degrees for 13-15 minutes. Broil for an extra 2-3 minutes for a golden-brown finish. Garnish with parsley, and serve.
