Start by toasting your marshmallows. It takes less than a minute under the broiler so keep an eye on them! I turned away for a few seconds on one batch and ended up burning a bunch of my marshmallows.
Next, assemble your s’more but without the chocolate.
Melt your chocolate chips in a double boiler or in a glass bowl over a pot. Stir frequently so you don’t burn the chocolate. I also like to add a few tablespoons of coconut oil to thin out the chocolate a bit.
Once the chocolate is melted you can dip one end of your s’mores in the chocolate. Put the s’mores on a cookie sheet lined with a silpat. I made the mistake of putting one batch on a glass plate and ruined some of the s’mores.
Add a few sprinkles to the chocolate for some fun color.
Put the cookie sheet in the freezer for a few minutes or until the chocolate hardens.
