Potato, Bacon, and Cheese Breakfast Tacos

Ingredients:

  • 4 slices bacon chopped
  • 1 russet potato cubed
  • 2 eggs whisked
  • 1 cup cheddar cheese shredded
  • 6 corn tortillas
  • cilantro chopped

Instructions:

  1. Cook the bacon in a skillet over medium-high heat until browned and crispy, about 4 minutes. 

  2. Remove the bacon using a slotted spoon, then add the cubed potatoes to the skillet with the hot bacon fat.

  3. Season the potatoes with salt and pepper, then cook, stirring occasionally until browned and cooked through, about 10-12 minutes. 

  4. Add the whisked eggs to the skillet and season with salt and pepper. Cook, stirring constantly until the eggs are just set, about a minute. 

  5. Sprinkle the shredded cheese and cooked bacon over the top of the potatoes and eggs. 

  6. Pile the mixture onto a warm tortilla and serve, topped with cilantro.
