Ingredients
1envelopeactive dry yeast
1/4cupwarm water
1cupall-purpose flour
1cupwhite sugar
1cupwarm milk
Instructions
Add the yeast and warm water to a small bowl, let it dissolve for about 10 minutes, then stir well.
In a 2-quart glass or plastic container, combine 1 cup sifted flour and 1 cup sugar.
Slowly stir in warm milk and dissolved yeast mixture.
Pour the finished starter into a one-gallon plastic bag or container. (Consider this Day 1 of the cycle outlined below.)
Feeding the Starter
Day 1: Do nothing.
Day 2: Mash the bag.
Day 3: Mash the bag.
Day 4: Mash the bag.
Day 5: Mash the bag.
Day 6: Add 1 cup flour, 1 cup sugar, and 1 cup milk to the bag. Mash the bag.
Day 7: Mash the bag.
Day 8: Mash the bag.
Day 9: Mash the bag.
Day 10: Pour the bag's contents into a non-metal bowl, then add 1 cup flour, 1 cup sugar, and 1 cup milk. Stir well, then measure 1 cup of batter into 4 gallon-size ziplock bags to share.
Notes
NOTE: Do not refrigerate starter. It is normal for the batter to rise and ferment. If the bag starts to puff up, let some of the air out.
