Ingredients
1large egg
½cupmilk
¼cupcanola oil
1cuptapioca flour
½tspkosher salt
¼cupmedium cheddar cheese
¼cupparmesan cheese
Instructions
Preheat your oven to 400 degrees.
Blend egg, milk, oil, tapioca flour and salt in a blender until smooth.
Add cheese and pulse 2 times.
Pour batter into a mini muffin tin, filling each cup about ¾ full.
