Friday’s are our “photo shoot” days at OGT, which basically means that Britta, Kaitlyn and I get together and try to cram as many posts as we can into one day! The whole house becomes a mess (especially the kitchen) as we create and photograph our various projects, but at least it is limited to the one day, instead of EVERY DAY! (At least that’s how I try to look at it!) :-)
This past Friday Kaitlyn made up these cheese rolls that she’d recently had at a friends’ house and I could NOT stop eating them! I’m so excited she’s sharing them today because whether you eat gluten free or NOT, they are DELICIOUS!
Kaitlyn writes: There are a couple of Brazilian steak houses not too far from where I live in Utah. My husband loves these restaurants because they are basically all you can eat meat feasts – but my favorite things to get are the flavored lemonades and the cheese rolls! Oh the cheese rolls!! Jill shared a recipe for Brazilian lemonade a while back and today I’m sharing a recipe for the Brazilian cheese rolls.
These little morsels of melted cheese goodness are called Pao de Queijo and they’re made with tapioca flour which means they are naturally gluten free! Yay! But using tapioca flour instead of wheat flour means they definitely have a different texture than regular bread. Expect them to be more chewy than fluffy.
I can’t take credit for this recipe. I got it from my good friend and neighbor, Ashley, who got it from our other neighbor, Becky. Was that complicated enough for you? Ashley comes from Brazilian ancestry and also has a Brazilian exchange student living in her home. She told me this is her favorite recipe for Pao de Queijo. I figure if she likes it, it’s got to be pretty authentic! ;-)
She invited Erik and me over for a full Brazilian meal a few weeks ago and when I found out how easy this bread is to make I knew I had to give it a try.
Pao de Queijo: Brazilian Cheese Rolls
Yields 24 rolls
- 1 large egg
- ½ cup milk
- ¼ cup canola oil
- 1 cup tapioca flour
- ½ tsp kosher salt
- ¼ cup medium cheddar cheese
- ¼ cup parmesan cheese
A couple of tips on the ingredients…
I know a lot of people don’t like to eat canola oil so I tried a batch with coconut oil and they turned out great! My husband thought the coconut flavor was way too strong but both Jill and I thought it was subtle enough that it didn’t change the overall flavor too much.
There is no substitute for tapioca flour. It’s just what you have to use to get the right texture and consistency. I used Bob’s Red Mill Brand, which you can usually find in the gluten free or organic section of most major grocery stores.
Directions:
Preheat your oven to 400 degrees.
Put your egg, milk, oil, tapioca flour and salt in your blender and blend until smooth. I used my trusty Blendtec and mixed it with the “whisk” function. One whisk cycle was just enough to get the batter perfectly mixed.
Next, add the cheese and pulse 2 times. You’re not trying to pulverize the cheese. You just want to incorporate it with the rest of the ingredients.
Immediately pour batter into a mini muffin tin. If you aren’t using a non-stick pan, spray the pan lightly with non-stick spray before adding the batter.
You’ll want to fill each well about ¾ full. The batter is very thin so pour slowly! You can see in my picture that some of my wells are a little too full because the batter came out so quickly. At ¾ full you should be able to fill 24 wells.
Bake 10-15 minutes until your rolls are just barely golden and starting to puff.
Remove from oven and allow rolls to cool for a few minutes in the pan.
The original recipe said to bake for 15-20 minutes. I cooked one batch for 15 minutes and they were very overdone. You can see from the picture above that they puffed up so much that they were totally hollow in the middle and very crispy. They actually still tasted fine but weren’t quite the right texture.
I cooked the next batch for about 8 minutes. I thought they tasted great but they deflated quite a bit as they cooled. If you like them puffier I would cook them about 10-12 minutes.
Now dig in before they get cold…because the recipe I was given says they don’t reheat well.
But I wouldn’t worry, they’re so good that you probably won’t have leftovers anyway. ;-)
Brazilian Cheese Rolls {Gluten Free}
Ingredients
- 1 large egg
- ½ cup milk
- ¼ cup canola oil
- 1 cup tapioca flour
- ½ tsp kosher salt
- ¼ cup medium cheddar cheese
- ¼ cup parmesan cheese

I’m not opposed to gluten. Can I use regular flour in this recipe and if so, is the amount the same?

It calls for Minas cheese (which can only be imported to the US). The closest taste wise is queso fresco cheese. Cheddar in pao de queijo is gross. And make sure you use real, good quality parmesean cheese.

I do like to make a spinach puree with it to put in the ground beef to shape into burgers for my family because it gives them nutrition and it keeps the burgers juicy. My kids are smart and always know when im sneaking something into something but once you cook the burgers and put them into buns the kids cant see it

very satisfying…made without a crust this is as easy as a morning breakfast needs to be…like
scones or coffee cake….especially great hot from the oven, served cold with some ice cream for
dessert works also!
yeah, blendtec…i use mine every day for green smoothies and making leftovers into
soup bases…what could simplify life more?

Usually people always describe it as the bright red/purple soup made of beets. However, my great grandmother always said that this soup has to have a slight reddish hint, given to it by tomatoes…yes, tomatoes… and that potatoes should always stay their regular colour…white (and not turn reddish/purple). The only way to achieve it and get the flavour of the beet is to put the beet in your broth and let them simmer gently ’till it turns a pale yellow colour and then put in all the other ingredients.

It is definitely specific to North Dakota/Minnesota and was probably dreamed up by some German or Norwegian mom in the ’50s. But it is amazing and makes me think of home.

Hummus (any variety you can think of), Pad Thai (better than most Thai restaurants IMHO), Lasagne (w hot ital sausage, gr beef & chees sauce mmm) and Butter Tarts (w maple syrup). Depending where you live in the world, I think all these would be considered “ethnic” to some.

My favorite dishes to make are anything Italian. My Grandmother was an amazing cook and taught me to cook before I could walk. My earliest memories are of me, standing on a chair at her kitchen counter, up to my elbows in her flour container. While her traditional Italian pasta dishes were incredible, her lemon squares (not exactly Italian, I know) are still unrivaled. She was known in her old Chicago neighborhood as the best pastry chef in town. Her lemon square are morsels of divine lemony, buttery goodness! I don’t make them often, but when I do, the best complement I could ever receive is when my dad says, “These taste just like your Grandma’s!”

Ive had the recipe for 50 years…she had it for alot longer. Anyway, There has never been 1 person that has disliked these tasty homemade hot pockets. shredded Cabbage, Ground Turkey, Swiss cheese, onions, Black olives, celery seed and other spices sealed up in melt in your mouth rolls. The Best!! Can be made vegetarian also!

My family is Brazilian and my mom makes pão de queijo a lot! My other favorite “ethnic dish” would be brigadeiro. It’s also from Brazil. It’s basically a caramel/chocolaty/condensed milk/nesquick/buttery/DELICIOUSNESS. It’s seriously heavenly. I make it much more often than I should! haha!

I got the recipe from a friend who is married to a man from Mexico.It’s 1 lb of ground beef,cooked and drained,1 can of refried beans,2 jars of salsa,1 jar cheese salsa and chopped jalapeno peppers( however many you want for heat). Dump all into a pot and heat well,serve over tortilla chips. You can add topping’s like sour cream and diced green onion’s if you want.My entire family loves it.

If I had to choose one to highlight, however, it would probably be pollo asado the way LaTeresita (Cuban) restaurant in Tampa serves. With sides like yuca con mojo, maduros fritos, or yellow rice, it is a meal of pure bliss!

This may be the first recipe that got my daughter to eat lettuce!

Please log in or create a free account to comment.I make a dish that a Vietnamese gal taught me when I worked at a Sheraton Hotel near the entrance to Disney World. She was one of the cooks in the restaurant, and wanted to make dinner for us. It was with pork chops onions and sugar. It was amazing and I have made it many times since, but never as good as she made. She browned the chops on both side, and then place chopped onions on the pork chop, and cover them with sugar. Then she turned the chop over and did the same thing. It cooked until the chop was not showing pink, and it was served with some of the “toppings” on the chop.

I inherited the heavy pot that she used to cook them in all day and follow her recipe to the letter. Filled with rice and cooked in her home canned tomatoes and served with a dollop of sour cream. Yum.

Please log in or create a free account to comment.GREEK SPAGETTI : 4 small cans of tomato paste, 2 quarts of water, 2 Tablespoons of sugar, 1/2 tsp. of cinnamon, 1/4 tsp. of nutmeg, dash of salt and 2 onions (cut fine). Add all ingredients together and simmer for 3 hours (great in the slow cooker). DON’T SCRAPE SIDES (the bitter tomato clings to the sides). Before serving, add 1/4 to 1/2 a cube of butter. Make and serve meatballs separately. May substitute 4 cans of tomato sauce and reduce water to 1 quart. ENJOY………….the cinnamon really makes an impact……………
