OK….I’m running a little late getting my “One Good Thing” for today posted! Me and the kids were watching Harry Potter and the Deathly Hallows Part One on DVD in preparation for Part Two (and the final movie!) coming out in theaters tonight at midnight!!!! The excitement is almost palpable in our house! :-)
While I won’t be going to the midnight showing with my kidlets….(would rather see it with a theater full of “big kids” vs. teenagers…no offense kids), I will see it this weekend. It will be my treat to ME! After all, a dark theater, with a large Diet Coke and a large buttered popcorn is pretty much my idea of paradise. :-) I don’t do it nearly enough these days.
So….back to the task at hand. Something to post about! Since I am “short on time” tonight, it made me think of a couple of slow cooker recipes I’ve run across lately that are perfect for those days when dinner simply has to be quick and easy or nobody is going to eat! Bonus….they look delicious!!!! I’m jumping the gun a little here because I usually try and make things before I post them….but honestly….I think you will agree these look pretty fool-proof! (Not to mention delicious!!! Did I already say that??)
Easiest Dinner Ever (aka. Cream Cheese Crockpot Chicken)
- 1 bag of frozen Chicken Breast Tenderloins (2.5-3 lb bag)
- 8 oz block of cream cheese
- 1 can of Black Beans, drained/rinsed.
- 1 can of Corn, drained.
- 1 can of Rotel
put frozen chicken in the crockpot. put cream cheese on top of the chicken. dump in drained AND RINSED black beans dump in the drained corn. dump in the Rotel.
Cover & cook in crockpot on low for 6-8 hours. Stir ingredients every couple of hours (if you’re around). You can shred the chicken when it is done, or leave it as tenderloin.
After 6 hours: Turn crockpot off & let it sit for 30-45 minutes to thicken up. Serve over rice. Makes a BIG batch. Can use leftovers for burritos or tacos!
Does that look EASY and DELICIOUS or what?? I think I’m going to throw this in the crockpot tomorrow morning as a matter of fact!

ROOTBEER Pulled Pork Sandwiches
- 1 (2 pound) pork tenderloin (pork shoulder or butt can also be used)
- 1 (12 ounce) can of root beer
- 1 (18 ounce) bottle of barbecue sauce
- 8 hamburger buns
Put pork tenderloin in slow cooker and pour the can of root beer over the meat. Cover and cook on low for 6 hours or until pork shreds easily with a fork. After pork has cooked, drain and discard the root beer. Shred the pork and place it BACK in the slow cooker. Pour the barbecue sauce over the pork and stir to combine. Serve immediately or keep warm in slow cooker until ready to serve. Serve on hamburger buns.
I repeat……….easy and delicious!!!
Buy some bakery rolls to really impress family and friends! Or, you could go really crazy and make some Rhodes Bakery frozen rolls! (true confession time. I made Rhodes Rolls for the first time ever a few weeks ago….and now I am completely obsessed with them!)
This could definitely be considered “party food” too! But how easy for just plain ol’ family dinnner!
