Not Your Mom’s Grilled Cheese Sandwiches

love grilled cheese sandwiches! They are easy to make and always delicious. Plus, my whole family loves them (try one on the best gluten-free bread, a family favorite) because they are also easy to customize. With all of the fabulous cheese and filling ideas I’ve found, I even decided to start a Pinterest board just for grilled cheese recipes!

I recently tried a a new grilled cheese variation from my friend Maria at Two Peas & Their Pod and it was SO delicious I just had to share with you! It starts with sourdough bread, a sweet fig jam, creamy brie cheese, and crunchy apple slices. Trust me on this one…you are going to want one for lunch (or anytime) TODAY!

Brie And Apple Grilled Cheese Sandwiches

Gourmet Grilled Cheese Sandwich

Ingredients for 2 Sandwiches

  • 1 Tablespoon olive oil
  • 1/2 red onion
  • 4 slices sourdough bread
  • softened butter
  • 2 ounces fig spread
  • 1/4 pound brie cheese (you can cut away the wax coating, but you don’t have to!)
  • 1 granny smith apple
  • large handful of baby arugula

Gourmet Grilled Cheese Sandwich

The first step is to caramelize the onions. Thinly slice half of a red onion while the pan and olive oil heat up over medium heat. Toss the onions in the hot oil, and toss them around for a few minutes, until they’re looking dark and caramely. :-)

Set aside the onions while you assemble the sandwiches. Start with softened butter on one side of each slice of bread, and then spread about 1 tablespoon of fig jam on the other side of each slice.

Now layer thin slices of brie, thinly sliced apples, caramelized onion, and a bit of arugula.

Once your sandwiches are ready, heat a large skillet over medium-low heat. It may take a while, but the butter will burn really quickly if the pan is too hot, and you need a bit of time for the cheese to melt. Simply place the sandwiches in a warm pan and cook until the buttered bread is perfectly golden!

So simple, and so delicious! The brie and apples are a match made in heaven, and caramelized onions make everything taste better! This recipe would definitely impress family and guests but more importantly…your tastebuds!

  • You didn’t list my first choice. Grilled cheese with fresh tomato. Yum. As it so happens I’m fixing grilled cheese for dinner tonight and am gong to try the caramelized onions. I love onions on anything.

    • Tomato has always been one of my favorite additions to a grilled cheese sandwich, too. I also add a few slices of shaved or thin sliced ham to the inside, and crushed potato chips to the outside. It has become my family’s favorite sandwich.

  • I have been making my grilled cheese sandwiches on packaged naan. I toast each piece first on both sides in a grill pan so that I have one set of grooves on each side of both pieces of bread. Then spread one side of one piece with mustard and top with cheese. Assemble and toast the outside with opposite grill marks. I don’t add any butter but that’s the way we like it so …

  • Ooo! It’s 3 AM & I’m in thehospital fantasying about grill cheese sourdough and bacon w/ a kick ass cheddar! Instead, I’ll get 2 boiled eggs, plain Greek yogurt, a banana & mint tea. Hell, I’d even take a Starbuck breakfast sandwich. How low my standards have fallen! Hum. I’m @ 220 & Bway. There is always a bagel delux from Cold Cut City on 231 St.
