Tomato Soup With Fresh Tomatoes… In A Blender!
The tomatoes have already come and gone around these parts, but fortunately you don’t need garden fresh tomatoes to make this delicious, nutritious, and super easy blender soup! It seems like just a couple of weeks ago that I was up to my eyeballs in tomatoes from my garden, but those days are a fond memory now, with snow on the ground.
The good news is that my bumper crop of tomatoes inspired me to find tomato recipes, and my search led me to this incredibly easy and delicious blender recipe for fresh tomato soup. Grocery store tomatoes work just fine for this, since roasting them gives them a boost of flavor.
This soup could not be simpler to put together. Roasted tomatoes, onions, and garlic are blended with fresh basil into the most luxurious and fresh-tasting tomato soup you’ve ever tasted. Even the pickiest of eaters will fall in love! :-)
Easy Tomato Soup With Fresh Tomatoes (Blender Recipe)
Ingredients:
- 8-10 tomatoes, halved (I used a dozen or so because some of mine were pretty small)
- 2 medium onions, quartered
- 4 cloves garlic
- 2-3 Tbsp olive oil
- 1/3 cup sliced fresh basil
- salt and pepper, to taste
Directions:
Place the halved tomatoes, quartered onions, and garlic cloves into a large bowl and add the oil. Season well with salt and pepper, and stir well to coat.
Pour the oiled and seasoned vegetables onto a baking tray, and roast at 400 degrees for about 30 minutes.
After 30 minutes, remove the tray from the oven and admire how lovely your roasted veggies look while they cool for a few minutes. ;-)
Place the veggies into your blender, along with the sliced basil.
If you have a Blendtec blender, you’ll definitely want to use the “soup” function, which is the button on the very right under the power button. Not only does the soup function create the perfect silky smooth texture, it also heats the soup as well! Since the vegetables are still warm from the oven, the soup comes out at the perfect temperature once it’s done blending!
If you don’t have a soup setting on your blender, just pour the mixture into a pot and heat it over the stove. You can also use an immersion blender and smooth the soup out right in the pot!
Once the soup is blended, add salt and pepper to taste. If your soup is too thick, you can add a little vegetable broth or water to thin it out a bit. Serve with some crusty bread or a nice grilled cheese sandwich, and enjoy! :-)
Storing Leftover Tomato Soup
You can store leftover soup in an airtight container in the fridge for up to a week. You can freeze any leftovers too — it’s wonderful to have soup in the freezer for those hectic days when you get home late and tired!
To freeze the soup, let it cool completely, then freeze it in an airtight container for up to three months. To serve, thaw the soup in the fridge overnight and reheat on the stove. You can also freeze the soup in individual servings and use the microwave to thaw and reheat them.

I mash a third of the cooked vegetables by hand (with a potato masher) to add body to the soup…
(Hmmm…a Blendec would make the vegetable prep
so much easier!). I also make borscht (cold beet soup+
sour cream or creme fraiche) using my Russian grand-
mother’s recipe…which requires that I puree the entire soup smoothly in a blender or Blendtec.
I’d LOVE to win a Blendtec… Thank you for this contest.
I love this recipe;I love that you roast the veggies first. Roasted vegetables are tremendous! Can’t wait to try it!!!!

Please log in or create a free account to comment.I love making soup in the fall and winter! One of my favorites is split pea. I soak, then cook the split peas in vegetable broth, adding sauteed onions, garlic, a pepper of some kind, a carrot or two and then season with thyme, oregano, a bay leaf, smoked paprika and a little Tabasco sauce. After the peas are soft and the soup is thick and “soupy,” I remove the bay leaf and give a few whirls with my immersion blender, then salt and pepper to taste. I like it a little lumpy, but this could easily be made in the Blentec for a smoother, creamier soup.

Please log in or create a free account to comment.I made cream of potato soup several years ago and my family of 6 loved it! (Btw I consider soup to be a meal!) My mom – in – law gave me her Osterizer blender (it has the #10 on it.) It has to be over 20 years old! It only holds up to 5 cups so it would be wonderful to find a blender that can hold more than 5 cups! If I win this blender I would try other soups like cream of cauliflower or cream of wild rice soup! (A nice fluffy bannock would go great with these soups too!)
