Instant Pot White Bean and Chicken Chili (Recipe)
Ingredients
- 1.3 lbs skinless boneless chicken thighs
- 6 cups chicken stock
- 2 cloves garlic finely minced
- 1 medium onion diced
- 1 1/2 cup dry white northern beans
- 4 oz can diced green chiles undrained
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1 tsp salt
- 1 tsp ground black pepper
Instructions
- Rinse and drain your beans. (No need to soak beforehand!)ย Add all the ingredients except the chicken thighs to the pot.

- Cook on manual high pressure for 28 minutes, then shut it off and use the quick release to depressurize.

- Add the chicken thighs to the pot. Give the inside of your lid a quick rinse under cold tap water to help with resealing, then replace the lid and lock it. Set it for 13 minutes on manual high pressure.

- When the time is up, use the quick release, then remove the chicken. Shred the chicken thighs using a couple of forks, then return it to the pot.

- Use the Keep Warm function to keep the soup warm until dinnertime, or serve immediately.

You convinced me! I just ordered one on Amazon, and can’t wait for it to arrive. Although in retrospect, I think I should have bought the 7 rather than the 6.
I read reviews on Amazon.com. Some say canning requires 15psi and this is only 10-11 psi. Also if you get a cookbook from a regular pressure cooker, it assumes you are cooking at 15psi in the recipe. You will have to cook it longer at 10psi, which defeats the quick idea. Just my two cents. I have not bought one of these and I have no financial interest in any other products.
This is NOT a canner. Canning food requires a completely different pot. I have both. Not only is this not suited to canning (as it doesn’t maintain the pressure sufficiently and the pressure is not adjustable for altitude) but it is so small if you foolishly would use it for canning, it would only hold a few jars. For up to date canning rules, the Ball Blue Book is the most current and accurate resource.
What this is excellent at is cooking relatively quickly without having to babysit the pot. Much like a crockpot (which is can also perform as) but much faster. For those needing to make dinner after work this is fabulous. It also has a delay start – so set it to be ready when you get home. The IPDuo60 has two pressures, high and low… I’m not sure what they are specifically, but it is not super important for the details on that anyways.
I originally thought the IP thing was gimicky and who needs another appliance? Turns out – I love it. Even easy cooking that is normally done stove top without much of a bother comes out of the IP better and easier. Like boiled eggs and pasta with sauce. Seems dumb but… Fresh yard eggs actually peel when cooked in this thing.
So, from a skeptic to a fan – I suggest giving it another look. There is a reason there is such a huge following.

I’m confused as to what the difference is, between the two of them. Have you any idea? (it’s not inexpensive nor something you can easily go exchange….thus my questions)

Is it safe for cats and children to be around when the steam or pressure is releasing? My husband is scared the cats will be scalded if they walk by when the steam is releasing.
The steam release only happens for 30 seconds to a minute, so you could definitely keep an eye on the cats during that short time!
Jillee, from what I had read, I thought the Instant Pot functioned as not only a pressure cooker, but a slow cooker, a rice cooker, a yogurt maker, etc. I don’t have one yet, but it’s been on my wish list for about a year. I have a small kitchen with very little storage, so I love items that have multiple uses. Is that true? As I said, I do not have one yet, but if it does function as 7 different products, I can get rid of a crock pot, my rice cooker, my pressure cooker and my yogurt maker and only have to store one pot verses all of those gadgets. WOW!
yes, it works as all of these tools! I bought one a few months ago, and love it! I use it ALL the time. You won’t regret it. I haven’t touched my rice cooker, crock pot, or pressure cooker since.

I was debating about size also. It is just my Husband and myself, but I’m going back and forth between the 6 and 8 quart. I have a 6 quart non electric Fagor pressure cooker, but I’ve heard such great things about Instant Pot. Probably I would only need the 8 quart to make large amounts of meat sauce and sausage to freeze. I don’t know if you can help me make a decision or not..

i have the 8 quart which I love because not only can i cook larger batches of things like chili or bone broth, but we have lunch with our church family every Sunday after the service, and I can take plenty of food. I have an 8 qt Fagor Lux Multi cooker brand that I got from Bed Bath and Beyond with a 20% off coupon via their emails. (if you sign up to get their emails, they periodically send these 20% off coupons.) Also, Amazon does occasionally run the 6 quart instant pot brand for $79. It normally sells on Amazon for $99.

Your timing is impeccable. My husband gave me an InstantPot for Christmas. I made my first dish yesterday – 15 – bean soup. It took me hours because I am doing something wrong as far as pushing the buttons (in the correct order, perhaps?), then I read a blog in which the lady said she seldom uses all the buttons; since the pot usually defaults to “high pressure”, she just uses the “manual” button. I tried this and finally managed to make my soup! I need to figure out what I’m doing wrong, because I’d like to be able to use the variety of buttons. Anyway, thanks for the post – I’ll probably try the French dips next. :)
