Chicken Roll-Ups + 30 More New Years Appetizer Ideas

Is anyone sick of holiday eating yet? Me either! :-) Especially since New Years Eve and New Years Day often involve New Years appetizers, or “small bites” as I like to call them. I am a big fan of small bites! This recipe we are sharing today is absolutely perfect for whatever type of celebration you have in mind this week. And of course one small bite won’t be enough…so we have a whole lot more to offer as well! You might be hard-pressed to choose! :-)

I’ve never been a big partier so my idea of a perfect New Year’s Eve is being curled up on the couch in my PJ’s with close friends and family playing games, watching the ball drop and eating yummy treats. And if I’m being completely honest the treats are totally my favorite part ;-) Today I wanted to share with you my favorite easy appetizer recipe along with some other recipes from here at One Good Thing by Jillee and around the web. This recipe for chicken roll-ups came from my cousin via a family cookbook. I’ve been making these for a few years now and any time I take them to a party they get snatched up before I can even blink! Nobody can resist the savory cream cheese herb filling and the flaky crescent roll shell.

Chicken Roll-Ups

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon onion salt
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon dried thyme
  • Salt and pepper to taste
  • 1-2 cups shredded chicken
  • 2 cans refrigerated crescent roll dough

Mix cream cheese, lemon juice, basil, onion salt, oregano, and thyme. I use my Kitchenaid mixer to shred my chicken so I like to use it to mix all the other ingredients together as well. But the mixing can also easily be done by hand.

Add the chicken to the cream cheese mixture and combine well. I like to make this recipe with a lot of chicken so I use two cups – but if you like less, go with one cup. Two cups shredded was about 1 1/2 large chicken breasts.

Separate the 2 cans of crescent roll dough into 8 rectangles. Each rectangle is made up of two triangular pieces – what would normally be one crescent roll.

Press the perforated edges together to seal the dough.

Spread about 1/4 cup of the cream cheese mixture over each dough rectangle.

Roll up the dough, jellyroll fashion, and cut into 4 pieces.

Place onto a lightly greased baking sheet (or one lined with a silicone baking mat) and bake at 375 degrees for 12-15 minutes or until golden brown.

Serve warm. These do keep well in the fridge for a few days. I haven’t ever frozen them but I have a feeling they would freeze just fine.
