Tomato Soup With Fresh Tomatoes… In A Blender!

The tomatoes have already come and gone around these parts, but fortunately you don’t need garden fresh tomatoes to make this delicious, nutritious, and super easy blender soup!  It seems like just a couple of weeks ago that I was up to my eyeballs in tomatoes from my garden, but those days are a fond memory now, with snow on the ground.

The good news is that my bumper crop of tomatoes inspired me to find tomato recipes, and my search led me to this incredibly easy and delicious blender recipe for fresh tomato soup. Grocery store tomatoes work just fine for this, since roasting them gives them a boost of flavor.

This soup could not be simpler to put together. Roasted tomatoes, onions, and garlic are blended with fresh basil into the most luxurious and fresh-tasting tomato soup you’ve ever tasted. Even the pickiest of eaters will fall in love! :-)

Easy Tomato Soup With Fresh Tomatoes (Blender Recipe)

Ingredients:

  • 8-10 tomatoes, halved (I used a dozen or so because some of mine were pretty small)
  • 2 medium onions, quartered
  • 4 cloves garlic
  • 2-3 Tbsp olive oil
  • 1/3 cup sliced fresh basil
  • salt and pepper, to taste
Step 1: Place the halved tomatoes, quartered onions, and garlic cloves into a large bowl and add the oil. Season well with salt and pepper, and stir well to coat.

Step 2: Pour the oiled and seasoned vegetables onto a baking tray, and roast at 400 degrees for about 30 minutes.

Step 3: After 30 minutes, remove the tray from the oven

After 30 minutes, remove the tray from the oven and admire how lovely your roasted veggies look while they cool for a few minutes. ;-)

Step 4: Place the veggies into your blender, along with the sliced basil.

Step 5: If you have a Blendtec blender, you’ll definitely want to use the

If you have a Blendtec blender, you’ll definitely want to use the “soup” function, which is the button on the very right under the power button. Not only does the soup function create the perfect silky smooth texture, it also heats the soup as well! Since the vegetables are still  warm from the oven, the soup comes out at the perfect temperature once it’s done blending!

If you don’t have a soup setting on your blender, just pour the mixture into a pot and heat it over the stove. You can also use an immersion blender and smooth the soup out right in the pot!

Step 6: Once the soup is blended, add salt and pepper to taste.

Once the soup is blended, add salt and pepper to taste. If your soup is too thick, you can add a little vegetable broth or water to thin it out a bit. Serve with some crusty bread or a nice grilled cheese sandwich, and enjoy! :-)

Storing Leftover Tomato Soup

You can store leftover soup in an airtight container in the fridge for up to a week. You can freeze any leftovers too — it’s wonderful to have soup in the freezer for those hectic days when you get home late and tired!

To freeze the soup, let it cool completely, then freeze it in an airtight container for up to three months. To serve, thaw the soup in the fridge overnight and reheat on the stove. You can also freeze the soup in individual servings and use the microwave to thaw and reheat them.

Thanks very much for this contest and for that recipe, too – I make a pasta sauce that’s similar to that, but I end up eating it like soup half the time anyway, since it is so tasty!

  14. I freeze chicken bones, etc.; leftover canned tomato puree; extra chopped onion when I’ve chopped too much for a recipe – you get the idea. Then once in a while, I cook all of it together plus anything else in the freezer that I think has been there long enough.

Then I strain it and have a nice base to which I can add whatever I want. It usually ends up being something like a minestrone. A favorite trick is to throw in a rind of Parmesan or other hard cheese, which adds delicious flavor and creaminess.

What I like the most is that my soup is different each time.

  17. My favorite homemade soup is one that I make called Chicken Taco Soup. I ran across it on line a year or 2 ago and it has become a dinner favorite at our house! It’s super simple too. I use 1lb of chicken.. boil, shred & season (sometimes I use taco season, sometimes chili powder & cumin.. it really just depends what I’m in the mood to do), then in large pot add chicken, 2 cups low sodium chicken stock, 1 jar salsa (big jar), and 2 cans pinto beans (the believe the recipe called for blank beans but I used pinto instead). I also like to add jalapenos too to give it a little more kick but it is not necessary. Bring it to a boil then let simmer for about 20 minutes and then TADA, dinner is served :D
