I’m always on the lookout for a kitchen “multi-tasker” – one item with LOTS of uses! A box of corn muffin mix is one of the most versatile items in your kitchen. It’s also really cheap – I was able to find a pack of six boxes of Jiffy corn muffin mix for just $3.19! Today I’m sharing four recipes that are easy, cheap and so tasty.
Cheesy Corn Casserole

- 1 cup cheddar cheese (shredded)
Preheat oven to 350 degrees F and combine all of the ingredients in a mixing bowl, except for the cheddar cheese.
Once the large lumps have been mixed out, pour the batter into a greased 9 x 13 casserole dish.
Bake for 45 minutes, or until golden brown. Then sprinkle the cheddar cheese on top, and return to the oven for 5 more minutes. Serve warm, and enjoy this cheesy, creamy, rich cornbread that’s packed with corn! SO good!

BONUS: I found this idea in a review on Amazon and just HAD to include it….sounds yummy! :-)
Sloppy Joe Casserole
Just mix a pound of cooked ground beef together with 1 can of sloppy joe sauce. Pour mix in a casserole dish. Sprinkle with cheese. Mix one box of Jiffy Corn Muffin mix (according to instructions on box) and pour on top of the sloppy joe mixture and cheese. Bake at 350 for 25 minutes.
Do you have a unique way to use corn muffin mix?
These recipes look so tasty and, once again, Amazon to the rescue! Corn muffin mix is not something we see in the U.K. much, if at all, but I can buy between two and twelve boxes on Amazon, and at pretty good prices too! Although there is someone selling 5 x 7 oz boxes for £10.50 which is $12.12! Some people really do try it on! I’m noticing that comments are open on some quie old postings, it’s wonderful to be able to comment, thank you
I add some Jiffy corn muffin mix to my chili as it cooks! It add that corn/mesa flavor that is a MUST in chili and also lends a hint of sweetness that balances out the strong savory flavors of a robust chili!
What a clever idea!
Thanks for sharing! To save even more money, you can make your own Jiffy Mix. I just buy the ingredients in bulk from Costco, shake them together in a container, and I have Jiffy Mix for the year. :)
Such a great idea!
I made the Cheesy Cornbread and it turned out very, very moist, almost like a corn pudding. Maybe it could be named Cornbread Casserole. I might try it again using two boxes of the Jiffy Cornbread mix, it may be more cornbread-like. It did taste REALLY good! I added some pieces of green pepper that I froze from my garden last year.
Great suggestion Cindy!
For the pancakes, can I use vegetable oil instead of melted shortening?
I make a copycat Marie Callender’s cornbread using 1 box of Jiffy cornbread mix and add 1 cup of yellow cake mix. I follow the directions on the Jiffy cornbread mix box. This makes a delicious cornbread almost exactly like Marie Callender’s. I wait until the yellow cake mixes go on sale at a local big-box store for $0.88 a box. This is a delicious and much less expensive alternative to the Marie Callender’s cornbread mix found in the bakery aisle in a box.
If you would like a recipe for Broccoli Cheese Cornbread, get back with me and I’ll be glad to give it to you. It is made with Jiffy Mix
Ooooo, that sounds yummy! I’d love to have that recipe! Can you post it here on OGT?
Yes, Yes, that sounds so good.
I grew up in Chelsea, Michigan (home of Jiffy Mix), so I’ll be sharing this blog post with all my Chelsea friends.
Thank Carol! :-)
Love these 4 ideas…I also use the Jiffy Cornbread mix for baking my fish fillets. catfish especially, Use mayonnaise to coat the outside of the fillet/ then dust the outside of the fillet in the cornbread mix, ( Usually make it as mess-free as possible by putting the baking mix in a plastic bag and shake) (the mayonnaise adds the oil needed) For my husband and I the box will be enough coating for two batches
Great idea!
Another thing that you can add to your Cheesey cornbread is to brown and drain some ground beef or turkey to even sausage. It is really good. If you wa t it spicy, add in some chopped jalapeños. This is good cold, too, but best warmed.
