
I’m always on the lookout for a kitchen “multi-tasker” – one item with LOTS of uses! A box of corn muffin mix is one of the most versatile items in your kitchen. It’s also really cheap – I was able to find a pack of six boxes of Jiffy corn muffin mix for just $3.19! Today I’m sharing four recipes that are easy, cheap and so tasty.

Cheesy Corn Casserole
From The Food Network

Ingredients:
- 1 box of Jiffy Corn Muffin Mix
- 1 (15 oz) can of whole corn (drained)
- 1 (15 oz) can of creamed corn
- 1 cup sour cream
- 1/2 cup butter (melted)
- 1 cup cheddar cheese (shredded)

Preheat oven to 350 degrees F and combine all of the ingredients in a mixing bowl, except for the cheddar cheese.

Once the large lumps have been mixed out, pour the batter into a greased 9 x 13 casserole dish.

Bake for 45 minutes, or until golden brown. Then sprinkle the cheddar cheese on top, and return to the oven for 5 more minutes. Serve warm, and enjoy this cheesy, creamy, rich cornbread that’s packed with corn! SO good!

Cheesy Corn Casserole

- 1 box of Jiffy Corn Muffin Mix
- 1 (15 oz) can of whole corn (drained)

- 1 cup cheddar cheese shredded
Instructions
- Preheat oven to 350 degrees F.
- Grease a 9 x 13 casserole dish.
- Mix together the 2 cans of corn, corn muffin mix, sour cream, and melted butter.
- Pour batter into casserole dish.
- Bake for 45 minutes, or until golden brown.
- Remove from oven and sprinkle with cheddar cheese.
- Return to oven for 5 to 10 minutes, or until cheese is melted.
- Let stand for 5 minutes and serve warm.

Corn Pancakes

These pancakes are light, fluffy and the corn muffin mix gives them a uniquely delicious flavor!

Corn Pancakes
Ingredients
- 1 package Jiffy Corn Muffin Mix
- 1 egg
- 2 Tbsp. shortening melted
- 1/2 cup milk
Instructions
- Preheat griddle to medium heat (350°F) and grease lightly.
- Mix ingredients until the batter is mostly smooth.
- Drop 1/4 cup of batter onto the hot griddle, and turn when pancakes bubble around the edges.

Corn Dog Muffins

These corn dog muffins are a fun twist on corn dogs and would make a great after-school snack!

Corn Dog Muffins
Ingredients
- 1 pacakge Jiffy Corn Muffin Mix
- 1 eggs
- 1/3 cup milk
- 2 hot dogs
Instructions
- Preheat oven to 400°F.
- Grease muffin pan or use paper baking cups.
- Prepare muffin mix as directed on package.
- Cut each hot dog into three equal pieces.
- Fill muffin cups 1/2 full.
- Place one section of hot dog, standing upright, in the center of each muffin cup.
- Gently pour equal amounts of remaining batter into each muffin cup.
- Bake 13 – 15 minutes or until golden brown.

Yellow Corn Cake

The corn muffin mix adds such a delicious twist to the traditional yellow cake. If you don’t like overly-sweet cake, this recipe is for you! I topped the cake with a simple buttercream frosting recipe that I found on the Food Network. Enjoy!

Yellow Corn Cake
Ingredients
- 1 box Jiffy mix
- 1 box yellow cake mix
- 2 eggs
- 3/4 cup milk
Instructions
- Preheat oven to 350°F. Grease a 13” x 9” pan.
- Combine ingredients. Beat for 3 minutes.
- Pour into pan. Bake 20 – 25 minutes.

Sloppy Joe Casserole
Just mix a pound of cooked ground beef together with 1 can of sloppy joe sauce. Pour mix in a casserole dish. Sprinkle with cheese. Mix one box of Jiffy Corn Muffin mix (according to instructions on box) and pour on top of the sloppy joe mixture and cheese. Bake at 350 for 25 minutes.

Where I live, Cornbread Casserole is known as spoon bread. The best part about that recipe is that the add ins are endless. Shredded chicken, green chilis, leftover diced ham. This is usually a dish I make when I’m cleaning out my fridge. I like to make mine in my crockpot.

Corn muffin mix is not something we see in the U.K. much, if at all, but I can buy between two and twelve boxes on Amazon, and at pretty good prices too! Although there is someone selling 5 x 7 oz boxes for £10.50 which is $12.12! Some people really do try it on! I’m noticing that comments are open on some quie old postings, it’s wonderful to be able to comment, thank you

Please log in or create a free account to comment.I made the Cheesy Cornbread and it turned out very, very moist, almost like a corn pudding. Maybe it could be named Cornbread Casserole. I might try it again using two boxes of the Jiffy Cornbread mix, it may be more cornbread-like. It did taste REALLY good! I added some pieces of green pepper that I froze from my garden last year.

Please log in or create a free account to comment.I make a copycat Marie Callender’s cornbread using 1 box of Jiffy cornbread mix and add 1 cup of yellow cake mix. I follow the directions on the Jiffy cornbread mix box. This makes a delicious cornbread almost exactly like Marie Callender’s. I wait until the yellow cake mixes go on sale at a local big-box store for $0.88 a box. This is a delicious and much less expensive alternative to the Marie Callender’s cornbread mix found in the bakery aisle in a box.

Please log in or create a free account to comment.Love these 4 ideas…I also use the Jiffy Cornbread mix for baking my fish fillets. catfish especially, Use mayonnaise to coat the outside of the fillet/ then dust the outside of the fillet in the cornbread mix, ( Usually make it as mess-free as possible by putting the baking mix in a plastic bag and shake) (the mayonnaise adds the oil needed) For my husband and I the box will be enough coating for two batches

Please log in or create a free account to comment.Another thing that you can add to your Cheesey cornbread is to brown and drain some ground beef or turkey to even sausage. It is really good. If you wa t it spicy, add in some chopped jalapeños. This is good cold, too, but best warmed.

Please log in or create a free account to comment.I have made this before. It’s 1/2 cup butter. You can reduce it if you want. It’s a very forgiving recipe. I have made it with 1/4 of butter and another time with 1/4 cup of coconut oil instead of butter which gave it great flavor. Add in jalapeños for a kick sometime! I have also made it without the cheese and it’s still delish! Thanks for the great recipes Jillee!
