Tomato Soup with Fresh Tomatoes… in a Blender!

The tomatoes have already come and gone around these parts, but fortunately you don’t need garden fresh tomatoes to make this delicious, nutritious, and super easy blender soup!  It seems like just a couple of weeks ago that I was up to my eyeballs in tomatoes from my garden, but those days are a fond memory now, with snow on the ground.

The good news is that my bumper crop of tomatoes inspired me to find tomato recipes, and my search led me to this incredibly easy and delicious blender recipe for fresh tomato soup. Grocery store tomatoes work just fine for this, since roasting them gives them a boost of flavor.

This soup could not be simpler to put together. Roasted tomatoes, onions, and garlic are blended with fresh basil into the most luxurious and fresh-tasting tomato soup you’ve ever tasted. Even the pickiest of eaters will fall in love! :-)

Easy Tomato Soup with Fresh Tomatoes (Blender Recipe)

Ingredients:

  • 8-10 tomatoes, halved (I used a dozen or so because some of mine were pretty small)
  • 2 medium onions, quartered
  • 4 cloves garlic
  • 2-3 Tbsp olive oil
  • 1/3 cup sliced fresh basil
  • salt and pepper, to taste
Step 1: Place the halved tomatoes, quartered onions, and garlic cloves into a large bowl and add the oil. Season well with salt and pepper, and stir well to coat.

Directions:

Place the halved tomatoes, quartered onions, and garlic cloves into a large bowl and add the oil. Season well with salt and pepper, and stir well to coat.

Step 2: Pour the oiled and seasoned vegetables onto a baking tray, and roast at 400 degrees for about 30 minutes.

Step 3: After 30 minutes, remove the tray from the oven

After 30 minutes, remove the tray from the oven and admire how lovely your roasted veggies look while they cool for a few minutes. ;-)

Step 4: Place the veggies into your blender, along with the sliced basil.

Step 5: If you have a Blendtec blender, you’ll definitely want to use the

If you have a Blendtec blender, you’ll definitely want to use the “soup” function, which is the button on the very right under the power button. Not only does the soup function create the perfect silky smooth texture, it also heats the soup as well! Since the vegetables are still  warm from the oven, the soup comes out at the perfect temperature once it’s done blending!

If you don’t have a soup setting on your blender, just pour the mixture into a pot and heat it over the stove. You can also use an immersion blender and smooth the soup out right in the pot!

Step 6: Once the soup is blended, add salt and pepper to taste.

Once the soup is blended, add salt and pepper to taste. If your soup is too thick, you can add a little vegetable broth or water to thin it out a bit. Serve with some crusty bread or a nice grilled cheese sandwich, and enjoy! :-)

Storing Leftover Tomato Soup

You can store leftover soup in an airtight container in the fridge for up to a week. You can freeze any leftovers too — it’s wonderful to have soup in the freezer for those hectic days when you get home late and tired!

To freeze the soup, let it cool completely, then freeze it in an airtight container for up to three months. To serve, thaw the soup in the fridge overnight and reheat on the stove. You can also freeze the soup in individual servings and use the microwave to thaw and reheat them.

  8. My favourite is a “recipe” was created for a picky invalid.
I made a lovely pot of chicken soup with some carrots, celery, and onions, a dash of cayenne pepper, chicken broth, parsely, and a small chicken breast.
The soup was for my daughter, sick in bed at the time.
Well, DD suddenly wouldn’t eat soup with “bits” in it.

DD needed nourishment, soup already made… so I put it all in the blender, bit by bit and came up with a thickened version DD would eat! It was even easy to serve in a mug, making it easier to eat. The cooked chicken breast blended nicely, no “bits” to deal with.

  9. This recipe may replace my favorite soup: a vegetarian minestrone with lentils and lots of chopped greens topped with a bit of shaved parmesan.

  10. This year I vastly expanded the size of my organic garden so I’ve had a proliferation of vegetables that I’ve needed to come up with ways to use beyond just canning and storing for the future. This tomato soup will be perfect for the abundance of tomatoes I have.

One other crop that’s done well this year is my butternut squash from which I make a terrific “bisque!”

A mix of butternut squash, onions, and carrots, the vegetables are seasoned with a dash of olive oil, pepper, and nutmeg, and boiled in a vegetable stock until soft. The soup is then transferred to a blender and pureed.

I’m on a paleo diet so I skip this next step but my wife takes half and adds some heavy cream to it for additional creaminess. I find the soup is sufficiently creamy without the added ingredient, though I guess it would be the cream that really makes it a “bisque.”

So there are two ways to make a delicious soup using a vegetable that’s bound to be in abundance everywhere now!
